- Cucuzzi are utilized in the kitchen much like summer squash and are best harvested at a length of 8 - 10 inches and enjoyed baked, grilled, raw, frozen or pickled. They can reach 40 inches and be dried as a gourd.
- Despite having the white flower of a gourd, these are eaten as a squash (eg. "Italian Squash") when the fruits are small. Enjoy them baked, grilled, raw, frozen, and pickled.

The vines can run up to 25 feet in length.
