Edible, crispy tubers!  Extremely easy to grow native edible perennial plant.  This sunflower relative establishes easily on a well-drained and sunny site.  Grows rapidly and lush, getting 6-8′ tall.  Blooms prolifically with little yellow sunflower like blooms.  Harvest from October- March.  Boiled, baked or even pickled these are tasty and nutritious food.  These inulin-rich tubers are a good diabetic food as well.  Really neat and fun plant to add to your low-maintenance or perennial food plot.  They gradually spread underground, so give it it’s own sunny spot.  Highly resistant to insects and disease.  Harvest next year after planting (the following autumn or winter).
